Le Cirque & Williams Selyem Vineyard at Bellagio's Tuscany Kitchen


This Saturday, June 4 at 7 p.m., two of the country’s most prestigious names in food and wine – the Maccioni Family’s Five Diamond Le Cirque and Williams Selyem Vineyard – will come together for a one-of-a-kind epicurean event at Bellagio’s Tuscany Kitchen.

Guests will indulge in an exceptional four-course menu by Le Cirque Executive Chef Gregory Pugin paired with sumptuous handcrafted wines selected by Williams Selyem Winemaker Bob Cabral and Master Sommelier and Bellagio Director of Wine Jason Smith. Chef Pugin will prepare this culinary masterpiece before their eyes in Bellagio’s high-tech and beautifully adorned exhibition kitchen; moments later, they’ll savor his cuisine.
From Northern California’s Russian River Valley, Williams Selyem’s rare varietals will accompany four courses by Chef Pugin, including:
- Canapés et Hors-d’œuvre Assortis “Le Cirque” paired with 2005 Blanc de Noir Brut Magnum
- Langoustines au Caviar – Citrus Marinated New Zealand Langoustines, Osetra Caviar, Apple & Vodka Gelée with 2005 Hawk Hill Chardonnay
- Le Flétan d’Alaska – Potato Crusted Halibut, Celery Root & Mustard of Meaux Purée, Sauce Vieux Balsamique with 2007 Westside Road Neighbors Pinot Noir
- L’Agneau Du Colorado – Espelette Crusted Lamb Chop, Taggiasche Olive Panisse, Piquillo Purée, Farcie of Spring Vegetables with 2004 Rochioli Vineyard Pinot Noir and 2004 Hirsch Vineyard Pinot Noir
